This is a quick and easy recipe your whole family will love!

Ingredients:
2-3 Cups Chicken, cut into one-inch pieces (Use any part of chicken).
3 Cups Thinly Sliced Potatoes (Canned or fresh).
2 10-12 oz. Cans Mixed Vegetables (May substitute one can each of any two of the following: Green Beans, Peas, Corn, Carrots).
1 Large Onion, diced
2 10-12 oz. Cans Cream Soup
One-half Cup Water
One Cup Grated Cheese

Directions:
1. Preheat the oven to 425 degrees F.
2. Place the chicken pieces in a covered dish and microwave on high for 5-6 minutes or until cooked through.
AS THE CHICKEN COOKS:
3. Line the bottom of a Pam-sprayed 9X13" baking dish with one-half the potato slices.
4. Remove the chicken from the microwave and drain.
5. Spread the chicken pieces evenly over the potatoes.
6. Cover the chicken with the vegetables you have selected.
7. Sprinkle the diced onions evenly over the dish.
8. Mix the water with the soup and pour over all.
9. Layer the remaining potato slices over the soup.
10. Top all with the grated cheese.
11. Cover the dish with plastic wrap and vent at one corner.
12. Microwave on high for 15 minutes, and rotate the dish one-quarter turn halfway through the cooking time.
13. Remove the plastic wrap carefully.
14. Place the uncovered dish in the oven and bake at 425 degrees F for 5-10 minutes or until the cheese is slightly browned.

Yield: 6 to 8 servings. Serve with a green salad and whole-wheat rolls. Add an icy sorbet for dessert!
